I love PIE!
Tidymom is having a Love the Pie! Party today and I thought I would join in the fun with my
Mini Apple Crisp Pie
The only requirement was that the pie had to be made with a Pillsbury pie crust.
I rolled out the Pillsbury pie crust a bit and cut circles with a 3' cookie cutter
tucked them neatly into the cupcake/muffin pan
then made the filling
6 apples, (I used 4 Granny Smith and 2 Rome)
2 Tablespoons cinnamon
1 1/2 cups sugar
3/4 cups instant oatmeal
1/2 cup flour
3/4 cup butter
I made this a very quick version added all ingredients to bowl and stirred (see really easy)
scooped the filling into the cute mini pie cups and baked for 20 minutes at 350
{speaking of bakeat350 I cannot wait to make her goat cheese and leek tart}
and while they were still warm I topped them with powdered sugar and what goes better with hot apple pie than a nice scoop of vanilla ice cream

Very quick and simple
I made it along with dinner and baked them while we ate and had hot pie right out of the oven
the camera lens kept steaming up while I was taking the photo :)
I just checked out some of the pies at tidymom hers looks delicious and so do the others check them out.
Oh I LOVE this!! I would have never thought to make little mini pies!!
