Polynesian meatballs with egg noodles

This recipe was published on the Tasty Kitchen website HERE

This is a favorite!
(and I learned how to write on my photos too :)

It's also great if you have meatballs left over from a spaghetti dinner and don't want the same meal again.

I make two versions of meatballs, the first is when I have planned out my meal well and have all items in stock . If you lived in my house you'd know as well as my dear neighbor that I am always running out of eggs as I did the night when I made the pretzels and sent my daughter over at 8:30pm to "borrow" one.
I'm so glad they always have eggs!

If I don't have enough eggs and sliced bread (another item I seem to run out of easily)
You may think I live far out in the country with no general store near by, that is not the case.
The grocery store is only one mile from my house. (stop laughing at me)

when I am in a hurry and need to get dinner fixed in a hurry,
I don't always want to go to the store run into at least three people you know and wonder why getting bread and eggs took 25 minutes, doesn't that always happen when you are in a hurry!
Don't get me wrong I love to talk and run into people, just not when I'm hungry and need to get dinner on the table fast.

{Should I go into how long it takes me to sometimes just get milk,
and we all know they put it in the back of the store
so we have to walk down and around the store
just to pick up the one item we really need.
In my store it's the chip and soda aisle.
The soda I can pass by but the chips, have I ever told you
I
 L-O-V-E
potato chips
I even have put potato chops in chocolate chip cookies and they are so good!
Really!
That aisle is torture!}
I feel better I let you in on that.

 back to the topic

Make quick meatballs with
1 pound ground beef
1egg (leave out if you don't have it)
2-4 Tablespoons milk (add more milk if needed)
1/2 cup Italian breadcrumbs
add some grated parmesan/romano cheese
mix all together and for into balls
then bake at 350 for about 15-20 minutes roll them over after half the time.

While they bake begin to boil water for your pasta,
then start on the sauce
1 can pineapple chunks, drain and put the juice into saucepan and reserve pineapple to add at end
2T cornstarch
1T soy sauce
1/3 cup vinegar (rice wine or white)
1/2 cup brown sugar
mix all the above items then bring to boil while stirring,
turn down to medium (or it will burn)
if you like 1/2 green pepper diced
1 large carrot grated/julienned
then add pineapple
keep on low while you
prepare pasta and finish baking the meatballs.

Fast and Easy

This is one of my families favorites!

  1. Cute post! I can resist the potato chips at the store, but if I bring them home I can resist them in my pantry! Your meatballs sound delicious!
