Pumpkin has arrived!

YIPPEE!
Pumpkin has arrived in the stores and I couldn't be happier!
I hope that is the end of the pumpkin shortage,
as I love pumpkin.
I knew just what I would bake when I got my hands it.
Pumpkin Scones
These cute little bites are deliciousness.
If you like pumpkin, these will be right up your alley!
(where do sayings like that come from?)

Pumpkin Scones
2 cups all purpose flour
7 Tablespoons sugar
1 T baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp ground ginger
8 Tablespoons cold butter
1/2 cup canned pumpkin
3 Tablespoons skim milk
1 large egg

Icing
1 cup powdered sugar
2 Tablespoons milk
1/4 tsp ground cinnamon
1/4 tsp ground nutmet
1/8 tsp ground cloves
1/8 tsp ground ginger
(orange food coloring)

Preheat oven to 425 degrees

Combine flour, sugar, baking powder, salt, and spices in a large bowl. Cut in butter with a pastry knife, until mixture is crumbly with no chunks of butter.
In a separate bowl, whisk together pumpkin, milk and egg. (I sometimes add a tsp. of vanilla too)
Fold wet ingredients into dry ingredients and form into a ball. It is sticky.
Pat out dough onto lightly floured surface. I used a heart cutter to form these.
Last year I made them like this
place on a parchment lined baking sheet or silpat and bake for 15 minutes
scones should begin to turn light brown, remove from oven then, let cool on rack
make icing by mixing powdered sugar and milk together with spices and apply to scones when cooled, I dunked the tops in like you see them do with donuts and let the excess drip off.

What is your favorite pumpkin recipe?

  5. These are beautiful and the spices are just jumping off the photo. I love pumpkin too and would have to say that pumpkin pie with whipped cream is my favourite pumpkin dish. But then again...I haven't tried these scones yet.

  9. Diane, I just love pumpkin at this time of year. And scones are my "thing" at any time of year. These look scrummy, as they say in England.

My pumpkin pie would be a shock to the system of most people--when I make it just for my husband and me, I use only 1/4 cup sugar for a full-size pie. When I'm making it for other people, though, I use more.
